Stuffed Avocado On The Go:

We love avocados, but hate when they get brown and aren't fresh when it comes time to eat them. Stuffed avocados are a great way to have fresh avocado and some protein on the go. This is an easy recipe to make at the beginning of the week for grab-and-go lunches, keep it all fresh in your  Freezable Lunch Bag .
  1. 1 Whole Avocado
  2. cups cooked chicken breast chopped
  3. 1/4 teaspoon salt
  4. 1/4 teaspoon black pepper
  5. cup mayonnaise
  6. tablespoons lemon juice
  7. 1/2 cup celery finely chopped 

Step 1: Mix all the ingredients (except the avocado) together well in a bowl and refrigerate for at least an hour. Split the filling into as many jars as you'd like.

Step 2: Bring a whole Avocado and a jar full of your chicken salad in your PackIt Freezable Lunch Bag.

Step 3: Cut your avocado in half, fill it with chicken salad and enjoy!
