Grilled chicken makes a great base for a weeks worth of meal prep! But since we know that eating the same lunch every day can get a little boring, we came up with three delicious ways to add variety and flavor to your lunches. Also it's a way to save time by using the same chicken for every dish! For these recipes we used 'Trader Joe's Sliced Roast Chicken Breast' since it's already cooked, sliced, and seasoned with oil, salt, and pepper (however you can cook and season your own chicken to your liking). All three of these recipes are so delicious and simple, you could make each in less than 10 minutes!

1st Dish: Grilled Chicken Mexican Bowl


What you'll need:

  • Chicken
  • Quinoa
  • Black Beans
  • Corn
  • Bell Peppers
  • Shredded Cabbage
  • Topped with pico

Fill the bowl with your quinoa first, then add in the rest of the ingredients. We chopped our chicken to make it easier to toss in the salad. Add in your favorite salsas or toppings to spice your meal up!

2nd Dish: Grilled Chicken Wrap

What you'll need:

  • Tortilla of Choice
  • Chicken
  • Sun dried Tomatoes
  • Cucumber Slices
  • Feta
  • Pesto Sauce

Start by laying your tortilla out flat, then add the pesto sauce evenly, and sprinkle the feta cheese on top. Then layer cucumber slices and top with sun dried tomatoes. Add the chicken last before wrapping it all up. Try to keep the larger ingredients at the center of the tortilla to make it easier to fold. Once you've added all your ingredients fold in the shorter ends and then fold one of the longer sides, rolling your wrap like you would a burrito. Then slice in the middle so it can fit nicely into a tupperware.

The great part about wraps is that you can literally add anything! It's a great way to use the veggies in your fridge and you can switch up the sauces to change the flavor of the wrap entirely! The best part is you can make it at home, or bring all the components in your PackIt to assemble a fresh delicious wrap at work.

3rd Dish: Grilled Chicken Salad


What you'll need:

  • Grilled Chicken
  • Mixed Greens
  • Red Onions
  • Mushrooms
  • Cherry Tomatoes
  • Balsamic Dressing

This salad is simple and easy to assemble. Make sure your chicken is chopped before adding it into the salad. First start by adding a generous handful of mixed greens to the bottom of your bowl. Then slice your onions to whichever size you please. Add in your cherry tomatoes next along with mushrooms. Top it all off with a balsamic dressing to bring the ingredients together!

Salads are a great healthy way to get those veggies in, but sometimes can leave you wanting more. Add a big helping of grilled chicken will help you get that fuel you need to make it through the day!
