Often times when preparing appetizers for large gatherings its difficult to deliver delicious and healthy meals! However appetizers don't always have to be fried or smothered in cheese to taste good. That's why we are sharing this refreshing and tasty dip that includes 3 different superfoods: lemon, kale, and beans!


What You'll Need:

  • Canned Corn
  • Canned Black Beans
  • Cherry Tomatoes
  • Half Diced Red Onion
  • 1 Yellow Pepper
  • 1 Lemon
  • 1 Can of Black Olives
  • Banana Peppers
  • Cilantro
  • Salt & Pepper
  • Olive Oil
  • White Wine Vinegar
  • Chili Powder


Step 1:

Drain and rinse your can of beans, corn, and black olives! You then want to wash and chop 1/2 cup of kale and 1/2 cup of cilantro. Next you'll slice your 1 cup of tomatoes, 1/2 onion, 1 yellow pepper, and 1/3 cup of banana peppers. Add all of these ingredients into a large mixing bowl.


Step 2:

Pour a 1/2 cup of olive oil and 1/3 of white wine vinegar. Then add 1 teaspoon of chili powder, 1 teaspoon of salt, 1 teaspoon of pepper, and squeeze 1 full lemon! mix all of these ingredients well until flavor is evenly distributed. If you feel the dish needs extra flavor, add additional pepper, chili powder, or lemon!



Step 3:

Place into a bowl and pair with tortilla chips or sweet potato chips and let your guests enjoy this delicious dip; no one will ever know you snuck kale in there!
